Kefir Recipes



RAW CHEESECAKE

Crust

Can use "Sugar Cookie base" recipe (from breakfast ideas using sprouted buckwheat) for crust or Chocolate Cookie Crust (our latest favorite) as follows: 3 c. mixed soaked and then dried nuts/seeds

Grind nuts & seeds well in food processor, add 1/3 c. carob powder, 2 c. black mission figs, blend well. Add 1 T. vanilla and enough dates to make a sticky dough (about 1 c.). Process and press into large pan or cookie sheet.

Filling

1/2 gal. kefir, strained through case cloth lined collander overnight (keep whey for other recipes, drink, or feed to animals. If you're short on time you can strain in as little as an hour, but may need to add a little more psyllium to get enough firmness.) 1/2 c. honey 1 tsp. almond extract 1 T. vanilla extract 1 T. psyllium powder

Process ingredients and pour over crust, smoothe with spatula.

Ideas for Toppings

-Frozen blueberries are a great topping.. top at least 1/2 hour before serving.

-Blackberries or raspberries, fresh or frozen

-Strawberries sliced thin

-Fermented cherries and a little of their juice

-Any fruit blended with a little honey and swirled on top before it's
set or after


LEMON FLUFF

1/2 c. honey zest and seeded pulp from 1/2 large lemon 2 rounded T. psyllium 6 c. kefir 1/4 c. ground golden flax (optional)

Blend and serve.
